The recent revival of interest in the molecular architecture and functioning
of biological membranes has greatly stimulated research on phospholipids.
It has become clear that phospholipids are essential for the formation of nearly
all biological interfaces. The combination of lipophilic and hydrophilic structures
within one molecule is apparently an important prerequisite for the
integrity of a biological barrier. The hydrocarbon chains of phospholipids
present an apolar region by lipid-lipid interaction and offer possibilities for
the association with hydrophobic regions of membrane proteins
